Ingredients:

  • 2 slices of whole grain bread

  • 1 ripe avocado

  • 2 eggs

  • 1 tsp lemon juice

  • Salt and black pepper – to taste

  • A pinch of chili flakes (optional)

  • Fresh herbs (parsley or chives) – for garnish


Instructions:

  1. Toast the bread – Place the slices in a toaster until golden and crispy.

  2. Prepare the avocado – Mash the avocado with a fork, add lemon juice, salt, and pepper. Mix until creamy.

  3. Poach the eggs – Bring water to a simmer in a small pot, add a splash of vinegar. Stir to create a gentle whirlpool and drop in the eggs one by one. Cook for 3 minutes until whites are set but yolks remain soft.

  4. Assemble – Spread the avocado mix evenly on the toasted bread. Place a poached egg on top of each slice.

  5. Finish – Sprinkle with chili flakes and fresh herbs. Serve immediately.
